Super easy and tasty Roasted Vegetable and Feta Pasta.
Ingredients
1 cup cherry tomatoes
1 Red Pepper chopped
1 Orange Pepper chopped
1 Yellow Pepper chopped
3 small Zuchini chopped
1 Red onion (sliced)
1 Cup of Feta cheese
1 Box of bow tie pasta
2–3 tablespoons of Olive Oil
Salt and Pepper
Instructions
1- Preheat Oven to 350 degrees
2- Wash your vegetable and cut them accordingly. Place in bowls to easily pull from to place on baking sheet.
3- Cover a large baking sheet with parchment paper.
4- Design your rainbow on the pan. Starting with the red vegetables and ending with the feta as the clouds. The kiddos took control of the design. Let them have fun with it. Perfection is watching their smiles.
5- Drizzle pan with Olive oil and sprinkle with salt and pepper.
6- Bake for 20 minutes or until tomatoes pop open.
7- While vegetables are baking, boil a pot of water and cook pasta.
8- When Vegetables and pasta are done cooking combine in large bowl. Serve warm.
