Recently we have had to adjust our wheat-loving house to gluten-free baking for some of our children. This has become quite an adjustment for this baking-loving family. Luckily there are so many gluten-free options out there for baking. We started playing with the 1:1 flour replacements. Some of our tries have been successful, and some not so much. Gluten-Free Apple Spice Pancakes were a hit!
Ingredients

2 tablespoons of sugar
5 tablespoons of melted unsalted butter
3 cups of King Arthurs Gluten Free 1:1 Flour
1 1/4 tablespoon of baking powder
1 tablespoon of Apple Pie Spice
2/4 Xanthan gum
3 cups of milk
1 tablespoon of Apple Pie Spice
2/4 Xanthan gum
2 eggs
Instructions
- First, take the melted butter and mix in the sugar. Allow your child to pour each into the bowl. They will enjoy mixing it.
- Add the dry ingredients into the bowl; flour, salt, baking powder, salt, apple pie spice, and Xanthan gum. There are many different measurements here, making this a teaching moment. Allow them to measure the ingredients out and then stir.
- Crack eggs in a separate bowl first and then mix with a fork. Have them crack the egg; they LOVE this accomplishment. We crack them in a separate bowl in case a shell gets in.
- Add eggs and milk to the batter. Allow them to add the final ingredients and stir.
- Heat the skillet. Spray if needed. Our skillet is non-stick.
- Using a 1/4 measuring cup, pour the batter onto the skillet for the desired size of pancakes.
- Cut some apples up, get your maple syrup out and ENJOY! My children have the child-safe knife set, allowing them to cut the apples. They enjoy making the plates look pretty.
