Making dinner can be a chore, especially when cooking with children with different taste buds. When I involve them in the planning or making, I have a better chance of them enjoying the meal. Not saying this is foolproof because I do not know how your household is, but in mine, it is a miracle if I can please everyone with the food put in front of them.
We celebrate the Lenten season; we do not eat meat on Fridays. This season is always a reminder of how much meat we consume. We have to be creative, and 9 out of 10 times, our creativity is a hit. Tonight we set forth to make roasted vegetables for dinner to put over pasta. As I was cutting the vegetables, my toddler was throwing a tantrum, and I was trying to figure out a way to please him and still make dinner. Looking at the colorful vegetable, I had an “aha” moment; why not make a rainbow?
I asked my toddler to join me on his stool and make the rainbow. I first cut up all the vegetables and placed them in bowls so he could quickly grab them. I put parchment paper on a baking pan and built a rainbow together. The activity in the kitchen caused my other children to join in the fun. We spoke about the colors and the rainbow while we created our masterpieces. Being that it is the week of St. Patrick’s Day, we accomplished an educational, hands-on St. Patrick’s day meal on our meat-free Lenten Friday!! Woot Woot! Enjoy!
Rainbow Roasted Vegetables Pasta with Feta
Description
Super easy and tasty Roasted Vegetable and Feta Pasta.
Ingredients
1 cup cherry tomatoes
1 Red Pepper chopped
1 Orange Pepper chopped
1 Yellow Pepper chopped
3 small Zuchini chopped
1 Red onion (sliced)
1 Cup of Feta cheese
1 Box of bow tie pasta
2–3 tablespoons of Olive Oil
Salt and Pepper
Instructions
1- Preheat Oven to 350 degrees
2- Wash your vegetable and cut them accordingly. Place in bowls to easily pull from to place on baking sheet.
3- Cover a large baking sheet with parchment paper.
4- Design your rainbow on the pan. Starting with the red vegetables and ending with the feta as the clouds. The kiddos took control of the design. Let them have fun with it. Perfection is watching their smiles.
5- Drizzle pan with Olive oil and sprinkle with salt and pepper.
6- Bake for 20 minutes or until tomatoes pop open.
7- While vegetables are baking, boil a pot of water and cook pasta.
8- When Vegetables and pasta are done cooking combine in large bowl. Serve warm.
